While there are dry spells in egg production, there are also times when far more eggs are produced than can possibly be used. Freezing is a handy way to save these eggs for a longer period of time in order to always have eggs on hand.
Freezing eggs is simple, but make sure it’s
done right or it can spell disaster.
Following are directions for the safest way to
freeze eggs:

Crack the eggs into a freezer safe container.
Remember, never freeze eggs that are still in their shell (more info on this below).
- Stir, but do not whip, the eggs so that the yolks and whites are mixed.
- Cover and freeze the container.
Precautions when Freezing Eggs
To Thaw Frozen Eggs
Place the frozen egg container into the refrigerator overnight.
Do not try to defrost frozen eggs in the microwave because that ends up with an overcooked white and a still frozen yolk.
If whole eggs in the shell freeze accidentally,
are they safe?
Shell eggs (an egg still in its shell) should not be
frozen.
If an egg accidentally freezes and the shell
becomes cracked during freezing, then discard the
egg.
However, if the egg did not crack, then thaw it in
the refrigerator as soon as possible after freezing
according to the above directions. After thawing, it
can be successfully hard cooked. Other uses for a
previously frozen whole egg are limited because
freezing causes the yolk to become thick and syrupy,
so it will not flow like an unfrozen yolk or blend
well with the egg white.
