I’ve never figured out why these creamy little treats are called deviled eggs. Deviled eggs are not hard to make and they don’t have a spicy or otherwise devilish flavor. It is actually quite easy to make deviled eggs. No special tools are required, simply a knife and fork. Heavenly eggs seems like a more appropriate name for deviled eggs, whip some up and we think you’ll agree.

Deviled eggs can be made any time of year, but they spike in popularity as an appetizer to Easter dinner. With Easter approaching, people are getting ready to make hard boiled eggs in preparation for coloring Easter eggs. This brings up a good question… can you make deviled eggs from colored easter eggs? Our answer, of course, revolves around the food waste problem and how you can use food for both decor and sustainability. But, there is one big issue here – hard boiled eggs must be refrigerated to remain safe.

So, if you’ve used your colored eggs to decorate the brunch table and then placed them back into the refrigerator before the two hour time window, then go right ahead and make deviled eggs for dinner. If you scattered the colored eggs all over the yard in the hot sun, then do NOT use those eggs to make deviled eggs or anything else for that matter, they are trash.

Ingredients to Make Deviled Eggs

Ingredients to Make Deviled Eggs:

To make deviled eggs from 6 whole eggs:
  • 3-5 Tbs Mayonnaise – (the more mayo, the creamier the filling)
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1 stalk Celery (finely chopped) – Optional or 1/4 tsp of Celery Seed – also Optional
  • 1 tsp Stone Ground or Spicy Brown Mustard – Optional
  • Paprika – Optional to sprinkle on top
  • The above amounts and ingredients can be varied to taste.

    Instructions to Make Deviled Eggs

    1. Start with hard boiled eggs. Carefully shell each egg and rinse it in cold water to remove any bits of shell.     2. Slice each egg carefully along the long side and pop the yellow yolks into a bowl.

    4. Add the above ingredients to the yolks and smash everything well with a fork until smooth, or chunky if you prefer.

    6. Place a spoonful of mixture into the hole of each egg white. For a fancier look, you can use a pastry bag with a ridged tip (or strong baggie with a cut corner) and pipe a doll-up into each hole but it is not necessary to make beautiful deviled eggs. Egg whites are slippery, so a plate with indents is very helpful but not necessary.

    8. Sprinkle the deviled eggs with Paprika and/or add a small spring of parsley, basil or other fresh herb, if desired.

    Variations when making Deviled Eggs

    How to make deviled eggs can be as simple as smashing yolks together with mayonnaise and a little salt & pepper or you can add about any other flavor you like when making deviled eggs. We are purists and like the simple flavor of eggs, but some people add dill, relish, pickles, onion, garlic or hot sauce among other things.

    You can also make deviled eggs in pastel colors by dying the egg whites once the yolks are removed. Just put a few drops of food coloring and about 1/2 tsp of rice vinegar into about 1/2 cup of water. Soak the egg whites until the desired color is achieved and then let dry on a paper towel before filling with the yolk mixture.
